Spread out across a high valley (around 2000m above sea level) smack in the heart of the country, DF or CDMX as it is variously known, is the most populous city in the whole of North America, easily dwarfing LA, Toronto and even New York. Mexico City is also the New World's oldest capital, and pre-Columbian remains of the twin 14th-century cities once known as Tenochtitlan and Tlaltelolco can still be seen alongside its elegant colonial buildings and modern hustle and bustle.

Mexico’s food scene is an explosion of flavours and aromas, where fiery chilli and paprika is balanced with refreshing lime and avocado, hearty spiced beans are topped with fragrant coriander, and where beautifully marinated meat and fish is cooked to tender perfection.

Mexican food is so much more than the Tex-Mex fusion many of us are familiar with; from tacos to tortas, chilaquiles to enchiladas, the best and most enjoyable way to explore Mexican holidays is to try as much of their authentic cuisine as possible.

If you’re a heat fiend, you’ll adore the endless array of chilli-spiced dishes, although there are plenty of less spicy foods for those who have a more sensitive palate. Tuck into the inimitable breakfast dish chilaquiles, which comprises toasted tortilla chips topped with salsa (choose red if you like heat, green if you prefer it mild), scrambled eggs or tender pulled chicken and topped with indulgent cheese and sour cream. Finished with a sprinkling of fresh herbs, chilaquiles is the perfect dish to start your day in the Mexican sunshine.

Chiles en nogada is another traditional Mexican dish that captures the heart of the country: a delicately balanced dish of chillies and nuts smothered in walnut cream and jewel-like pomegranate seeds, it’s the ideal dish both for invigorating your tastebuds while cleansing your palate.

For those with a sweet tooth, Mexico has a delicious array of desserts and sweet treats, including sticky corn cakes, chocolate chilli tarts and nieve de garrafa, a delightfully refreshing alternative to ice cream made from crushed fruit, ice, sugar and a pinch of salt.
