Just a few miles away lies the stunning Amber Fort, built from sandstone and marble in both Rajput and Mughal architectural styles. Food & Drink in the Golden Triangle

Rajasthani cuisine has been influenced by the state's dry weather. The dishes here are mostly vegetable-based, making it something of a haven for travellers with plant-based diets. Those who are fond of spice will also relish the opportunity to sample the region's many heat-laden dishes, though there are plenty of tasty sweet treats on offer too. The state's signature dish is dal baati churma. Served everywhere from street stalls to fine dining establishments, this much-loved delicacy comprises a yellow lentil curry, baked bread balls and a sweet crumbly cereal. Other popular dishes include khichdi, made with rice and lentils, and moong dal halwa, a dessert made from moong lentils, ghee, and sugar.

Delhi is famed for its wide variety of tempting street food offerings, ranging from kebabs to kulfi, Indian ice cream. Being home to such a diverse mix of people, the region's cuisine has evolved based on a range of different influences. Ubiquitous dishes include familiar favourites like biryani and butter chicken, as well as chole bhature - a regional staple consisting of a spicy chickpea curry served with a type of fried bread. A firm favourite among locals, it is often eaten at breakfast.

In Uttar Pradesh, dishes are based on a mix of onion, garlic, tomatoes, ginger and an array of spices. Among the most popular Mughlai dishes that the state is known for are puri-aloo, a potato curry served with fried bread, and Mughlai chicken, a curry with a rich, creamy gravy. In Agra, be sure to look out for petha. This soft, clear confectionary is made from ash gourd or white pumpkin and is found throughout the city.
